My bread recipes:

Rye bread (very easy).

Ingredients: 2 cups of unbleached all purpose flour, 1 cup of rye flour, 1.5 cup of water, 1 teaspoon salt, ½ teaspoon of yeast, 1 teaspoon of sugar.

Proof the yeast: mix sugar and yeast in 0.5 cup of warm (not hot) water. Wait until 0.5 cm thick foam forms. Mix the rest of water with flour and salt, add yeast. Mix thoroughly until dough is formed (I use a bread machine for that). Wait 2-24 hours. Mix again, let raise 1-2 hours. Bake 1.5 hour at 300 degrees F.

Adding 0.5 cup of gluten flour improves the texture.

Garlic bread.

Ingredients: 2 cups of unbleached all purpose flour, 1 cup of water, 1 egg, 1 teaspoon of salt, ½ teaspoon of yeast, 1 teaspoon of sugar, 1 teaspoon of olive oil, 6 cloves of garlic.

Proof the yeast as for rye bread. Prepare the seasoning: smash 2 cloves of garlic, mix with ½ teaspoon of salt ½ teaspoon of flour, olive oil and a little bit of basil and/or oregano. Mix the rest of water with flour and salt, add yeast and egg (without the shell :). Add 4 cloves of garlic (smashed). Mix well. Let rise 20 minutes. Mix again, let raise 20 minutes, then mix, sprinkle with seasoning on top and wait 30 minutes. Bake 1 hour in a covered dish (if the dish does not have a lid, aluminium foil works well) at 300 degrees F. Serve warm with olive oil.
